EXECUTIVE CHEF
Education and Experience:
Candidate must possess at least Professional Certificate, Bachelor’s Degree/Post Graduate Diploma/Professional Degree in Culinary Art, Food & Beverage Services Management, Hospitality/Tourism/Hotel Management or equivalent.
At least 5 Year(s) of working experience in the related field is required for this position.
Preferably Senior Manager specialized in Food/Beverage/Restaurant Service or equivalent.
Job Summary:
To Head the team of managers responsible for food production on a day to day basis.

Responsibilities:
Represents the food production area on a day to day basis.
Ensuring promptness, freshness and quality of dishes.
Coordinating cooks’ tasks.
Implementing hygiene policies and examining equipment for cleanliness.
Designing new recipes, planning menus and selecting plate presentation.
Reviewing staffing levels to meet service, operational and financial objectives.
Hiring and training kitchen staff, such as cooks, food preparation workers and dishwashers.
Performing administrative tasks, taking stock of food and equipment supplies, and doing purchase orders.
Setting and monitoring performance standards for staff.
Obtaining feedback on food and service quality, and handling customer problems and complaints.
To assist Accounts with Food/Beverage costs, cost control procedures and payroll.
Co-ordinates with Marketing on teach and taste classes and special promotions.

DIRECTOR OF SALES & MARKETING
Education and Experience:
Candidate must possess at least Professional Certificate, Bachelor’s Degree/Post Graduate Diploma/Professional Degree in Business Studies/Administration/Management, Marketing, Hospitality/Tourism/Hotel Management or equivalent.
At least 5 Year(s) of working experience in the related field is required for this position.
Preferably Senior Manager specialized in Sales & Marketing or equivalent.
Job Summary:
Functions as the strategic business leader of the hotel’s Sales and Marketing Department and is responsible for property reactive sales (outside of Event Booking Centers), proactive account sales and segment sales, local and social catering sales, business travel sales, reservation sales and destination sales, if applicable. The position shares responsibility for achieving revenue goals, guest and associate satisfaction and the financial performance of the department. Implements the brand’s service strategy and applicable brand initiatives in all aspects of the sales process. Leads on-property sales functions to build long-term, value-based customer relationships that enable achievement of hotel sales objectives. Evaluates the hotel’s participation in the various sales channels (e.g., Market Sales, Event Booking Centers, electronic lead channels, etc.) and develops strong working relationships to maximize hotel’s benefits. Proactively positions and markets the property. Manages the marketing budget to enable development of hotel specific campaigns, promotions and collateral to drive revenue and meet property objectives. As a member of the Executive Committee, develops and implements hotel–wide strategies that deliver products and services to meet or exceed the needs and expectations of the brand’s target customer profile and property associates and provides a return on investment to the owner and The Grand Renai Hotel.

Responsibilities:
Develops sales goals and strategies and ensures alignment with the brand business strategy.
Executes the sales strategy and ensures individual booking goals are met for both self and staff.
Coaches leaders of revenue generating departments in developing effective revenue strategies and setting aggressive goals that will drive the property’s financial performance.
Ensures the development of a strategic account plan for the demand generators in the market.
Ensures Sales team understands and is leveraging MI demand engines to full potential.
Ensures focus is on proactive selling as well as reactive selling.
Determines and develops marketing communication activities
Provides customer intelligence in evaluating the market and economic trends that may lead to changes in sales strategy to meet or exceed customer expectations.
Develops strong partnerships with local organizations to further increase brand/product awareness.
Reviews the STAR report, competitive shopping reports and uses other resources to maintain an awareness of the hotel’s market position.
Researches competitor’s sales team strategies to identify ways to grow occupancy and RevPAR and increase market share.
Attends sales strategy meetings to provide input on weekly and overall sales strategy.
Suggests innovative marketing ideas and proactively develops deployment strategies to continue to grow market share.
Evaluates and supports market sales and market sales account deployment.
Monitors and evaluates market sales performance.
Develops and manages internal key stakeholder relationships.
Serves as the sales contact for the General Manager, property leadership team and market sales leaders.
Serves as the sales contact for customers; serves as the customer advocate.
Serves as the property sales liaison with market sales/cluster sales, Revenue Management, Event Management, Marketing Communications and other hotel departments as appropriate.
Serves as hotel authority on sales processes and sales contracts.
Develops strong community and public relations by ensuring property participation in local, regional and national tradeshows and client events.
Participates in sales calls with members of the Sales and Marketing team to acquire new business and/or close on business.
Identifies public relations opportunities and coordinates activities to augment the overall marketing communication strategy.
Supports the General Manager by coordinating crisis communications.
Works with Human Resources, Engineering and Loss Prevention to ensure compliance with local, state and federal regulations and/or union requirements.
Executes and supports the operational aspects of business booked (e.g., generating proposal, writing contract, customer correspondence).
Executes exemplary customer service to drive customer satisfaction and loyalty by assisting the customer and ensuring their satisfaction before and during their program/event.
Serves the customer by understanding their needs and recommending the appropriate features and services that best meet their needs and exceed their expectations, while building a relationship and loyalty to The Grand Renai.
Gains understanding of the hotel’s primary target customer and service expectations; serves the customer by understanding their business, business issues and concerns, to offer better business solution both prior to, and during the program/event.
