Primula Beach Hotel is currently looking to recruit the following positions:

Assistant F&B Manager
Candidate must possess at least Diploma/Advanced/Higher/Graduate Diploma in Food & Beverage Services Management or equivalent.
At least 10 Year(s) of working experience in the related field is required for this position.
Preferably Senior Executive specialized in Food/Beverage/Restaurant Service or equivalent.
SCOPE

To assist and co-ordinate with Outlet Managers of the Food & Beverage and food production department to ensure maximum profitability. Your role is to be hands on assisting, on the front line.

JOB FUNCTION

Assistant F&B Manager assumes full responsibility for the operation of the F&B Department and food production department.
Ø Overall supervision of all restaurants, bars and delegated areas, ensuring that the policies are adhered to.
Ø Co-ordination of service manpower in the Food & Beverage Department. Pay close attention to business trends and monitor casual and overtime hours through checking rosters and ensuring compliance with award conditions, taking into account any likely variation in business levels.
Ø Co-ordinate monthly stock takes or crockery, glassware and linen and calculate monthly breakage / consumption reports whilst ensuring all outlets are properly stocked and running with correct par levels.
Ø To assist Outlet Managers in closely supervising service and product standards with a view to improving standards, work methods and profitability.
Ø To have a working knowledge of the food and beverage budget, forecasts and goals and assist in controlling all departmental costs, wages and productivity levels, specifically beverage costs.
Ø To carry out and develop specific projects that will have measurable result as directed.
Ø To be flexible with working hours as dictated by business requirements.
Ø To take an active role in food & beverage promotions ensuring outlets are able to gain the most benefit from expense and effort made.
Ø Ensure all Outlet Managers and supervisors are aware of departmental goals and objectives and are working towards them.
Ø To ensure high standards of hygiene and maintenance throughout the F&B department.
Ø Maintain correct security procedures at all times.
Ø To play an active role in the growth and development of Service First.
Position : AssistantF&B Manager (cont.)

Ø Be prepared to fill in for any supervisory position on a temporary basis.
Ø To ensure that staffing levels are maintained to budgeted levels and reflect the business levels of the hotel and local market of the time.
Ø With the above, you must ensure all training is being recorded and that the Outlet Manager is accountable.
Ø To ensure that docket control procedures are followed and that all revenue is posted. Any errors are to be followed up as well as any missing dockets.
Ø To ensure that the marketing strategies placed in the budget are actioned in each outlet.
Ø To be aware of all policies and procedures relating to food & beverage.
Ø You must have a working knowledge of the Business Plan – It is your responsibility to ensure the hotel makes the budgeted hotel profit.
Ø You are to organize the following meetings :
i. Monthly F&B meeting.
ii. Bi-weekly outlet meetings.
i. You are to attend Department Head’s morning briefing and weekly Sales Meeting.
Ø Planning is a fundamental function of a good Manager. You should always be planning for peaks and troughs, functions, special occasions. A planned Manager is a well organized Manager.

FINANCIAL

Ø To ensure outlets achieve financial performance targets for both revenue and expenditure.
Ø To ensure policies and procedures are followed with regards to cashiering and accounting.
Ø To collate and produce Month End Reports for the F&B Department.
Ø To collate and produce the Business Plan for F&B when requested to do so.
Ø To approve all F&B invoices for payment.

CUSTOMERS

Ø To ensure that each outlet establishes and maintains a service development team programme.
Ø To monitor outlets, to ensure that guests receive the specified standard of service as set out in the SOP for each outlet.
Ø To ensure that guest satisfaction levels remain high in all outlets and take corrective action where necessary.
Ø To handle guest complaints quickly and efficiently whenever necessary.
Ø To install and monitor quality assurance as per policies and procedures.

Position : AssistantF&B Manager (cont.)

HUMAN RESOURCE MANAGEMENT

Ø To ensure that strategies and practices are in place to facilitate the efficient and effective staffing of outlets such that financial and service targets are achieved.
Ø Assist Outlet Managers with defining, organizing and implementing staff training. Monitor such training to ensure it is effectively carried out.
Ø Monitor induction progress for all new employees.
Ø To ensure that all department Managers are undertaking the prescribed training for their outlets. You should give guidance and assist where necessary. To not do all as you will not have the time. Your role is to support and ensuring training is happening.
Ø To attend and direct training sessions as required.
Ø You must ensure that all outlets have induction plans for all new staff. Day one is the most important day as to success of our new staff member.
Ø To ensure that training are implemented with particular emphasis on co-ordinated and structured on job training.
Ø To ensure you develop and implemented strategies to reduce staff turnover.

HOTEL ASSETS

Ø To ensure all outlets are neat, clean and functioning correctly.
Ø To obtain all the necessary resources to enable improvements in the physical layout of outlets.
Ø To ensure all cleaning schedules are maintained.

SALES

Ø You are to develop a range of products that create outlet themes and differentiate the hotel in the market place.
Ø To constantly deliver products and services that meet the quality standards and expectations of guests.
Ø To achieve a reputation as the market leader in food & beverage products and services.

AUTHORITIES

Ø All purchase requests to be approved by the General Manager.
Ø All staff requisitions / staff changes to be approved by the General Manager.
